But as we’ve grown further away from the farm, our food tastes have become more homogenized and pickier. The meat cases of sleek supermarkets reflect this: You may find a few lonely packages of liver. Brains, kidneys and other innards are seldom seen except at ethnic markets and specialty butcher shops. Most restaurant menus are likewise almost bereft of what the French call abats de boucherie, the British "offal" and Americans, somewhat euphemistically, "variety meats," which include one of the most luscious delicacies of all, sweetbreads. 6, record 6, English, - offal

Many factors are responsible for the loss of weight or "shrink" of calves, feeder and slaughter cattle during marketing. As shrinkage increases, the potential for improving net returns from calves, feeders and fed cattle decreases. Shrinkage directly affects the income of all cattle producers. Shrinkage can be reduced through better handling techniques, attention to environment and diet, market planning and an appreciation of animal psychology. This module discusses how shrinkage effects net return and how producers can reduce losses from shrinkage. 1, record 15, English, - slaughter%20cattle

Agriculture and Agri-Food Canada. The Government of Canada introduced the Cull Animal Program in November 2003 to help producers face the challenges created by the closure of borders to live animals. On February 16, 2004, the Government announced that it was adjusting the program by removing the original requirement that animals be slaughtered before producers received payment. This change allows producers to access funds even sooner, provides equal access to the program across Canada, and helps with feed costs until producers can move their animals to slaughter. 1, record 17, English, - Cull%20Animal%20Program

1, record 17, French, - Programme%20relatif%20aux%20animaux%20de%20r%C3%A9forme

Improvements in food safety... reliable and uniform animal identification system. Public health would benefit from the development of such a system because this would permit accountability for and prevention of food safety hazards, including residues and harmful pathogens.... the public would benefit because data collection and long-term research studies are currently hampered by the lack of animal identification. Understanding of the ecology of food-borne pathogens in the production and handling period before slaughter needs to be improved.
