Tracheal cartilages hold the trachea permanently open(patent), but the soft tissue bands in between the cartilages allow flexibility so that the head and neck can move freely without obstructing or kinking the trachea. The absence of cartilage posteriorly allows the trachea to dilate and constrict in response to nerve stimulation, and for indentation as the oesophagus distends during swallowing.

The thyroid cartilage... is the largest of the laryngeal cartilages. It is formed by a right and a left lamina, which are widely separated posteriorly, but converge and join anteriorly. The most superior point of the site of fusion between the two broad flat laminae projects forward as the laryngeal prominence(Adam's apple). The angle between the two laminae is more acute in men(90°) than in women(120°) so the laryngeal prominence is more apparent in men than women.

The sheet ribbed belly is similar to the bone-in belly except the spareribs are removed in one piece as well as most of the associated bones and cartilage. The sheet ribbed belly should be relatively square in appearance. Sheet ribbed bellies may be purchased skin-on or skin-off with the fat at the edge of the cut tapered to meet the lean.
