Homologous recombination is that which we are taught about in introductory biology class. It is the crossing-over process observed during meiosis, though it occurs in bacteria as well. The process involves pairing up of similar DNA sequences, with then one sequence replacing the other, or indeed for meiotic crossing over, with the generation of now two recombinant strands, one for each chromosome homolog, rather than just one. The actual method used in initial crossing of wheat varieties is conditioned by the fact that wheat is bi-sexual and normally self-pollinating. Before the wheat plant has shed its pollen, the anthers are removed with forceps from the flowers of the plant that is to become the female parent, and a cover is slipped over the emasculated wheat head to exclude foreign pollen. The air comes from the Sahara (as a desert wind) and is dry and dusty, but the term is not used in North Africa, where it is called chom (hot) or arifi (thirsty). In crossing the Mediterranean the sirocco picks up much moisture because of its high temperature, and reaches Malta, Sicily, and southern Italy as a very enervating, hot, humid wind. As it travels northward, it causes fog and rain. In some parts of the Mediterranean region the word may be used for any warm southerly wind, often of foehn type. In the extreme southwest of Greece a warm foehn crossing the coastal mountains is named sirocco di levante. There are a number of local variants of the spelling such as xaroco (Portuguese), jaloque or xaloque (Spanish), xaloc or xaloch (Catalonian). The actual method used in initial crossing of wheat varieties is conditioned by the fact that wheat is bi-sexual and normally self-pollinating. Before the wheat plant has shed its pollen, the anthers are removed with forceps from the flowers of the plant that is to become the female parent, and a cover is slipped over the emasculated wheat head to exclude foreign pollen. Two or three days later, the cover is taken off and ripe anthers are removed from another wheat plant, selected as the male parent, broken over the stigma of each emasculated flower, and the cover replaced.
