FOOD CONTACT SURFACE [8 records]

Record 1 2023-05-16

English

Subject field(s)
  • Microbiology and Parasitology
CONT

Foods with a parasitic bacterium, Bdellovibrio Bacteriovorus. The addition of B. bacteriovorus, an obligate parasite of gram-negative bacteria, to meats and meat products reduces the gram-negative population, lengthens the shelf-life, and reduces the risks of food-borne illness. The organism is intended to be applied to the surface of the food, onto food contact surfaces by spraying or dipping, or as part of a sanitizing rinse. It may also be used on uncooked seafoods and whole eggs. High parasitic activity occurs under aerobic conditions, near neutral pH, and at temperatures [greater or equal] to 20°C. Many pathogens are susceptible to attack by the parasitic organism.

OBS

parasitic bacteria: plural of "parasitic bacterium."

CONT

The longer the contact time and the larger the surface area in contact with sap, the greater the potential for heavy metal contamination. The dangers of lead to human health are well documented. Although the health hazards of zinc in maple syrup can be considered insignificant, as a heavy metal, its uncontrolled addition to food should be avoided when possible.

CONT

CONT

The freezing system uses a highly effective heat transfer technology for rapid crust-freezing of raw protein-laden products. A low temperature plate filled with recirculating refrigerant begins the freezing process immediately to set the product’s shape. With a firm bottom surface, the product has enough integrity to be transferred to a spiral or tunnel freezer where it can be deep frozen to 0°F. Including investment and consumable costs, mechanical freezing can be as low as one-tenth the cost of comparable cryogenic crust-freezing systems.

CONT

The "CASCADE" superCONTACT freezing tunnel(mechanical refrigeration) uses two thin conveyors(throw-away polyethylene film) enabling the individual Quick Freezing of food products, especially if they are wet, fatty or sticky and without any risk of the products sticking together. This new process enables ultra fast freezing in two stages : product surface crust freezing on film conveyors level N° 1, followed by deep core freezing on the lower level film conveyors. These film conveyors slide over refrigerated contact plates constructed for the recirculation of a mechanically refrigerated low temperature refrigerant.

CONT

Contaminated, the disinfectant-detergent residual looses its germ-killing effect. This type of product should not come in contact with food, be used around open(unprotected) food products, or be applied to food preparation surfaces. [...] A disinfectant-detergent solution is used to leave a germicide residual on a 100% clean surface. If a germicide is applied into soil, the germicide will be contaminated and rendered ineffective. Once a surface that has been properly treated with a germicide is touched by a human, animal, plant, or something "dirty", washing, rinsing, and treating must be performed again in order to reinstate the protection. If an unspoiled treatment sets on a surface longer than its residual time(6± hours), its germ-killing muscle ceases. e. g. Hospital operating and emergency room surfaces, patient room surfaces prior to the arrival of a new patient, etc.

CONT

Anesthesia machines are wiped clean daily with alcohol or a disinfectant detergent solution.

French

Domaine(s)
  • Instruments chirurgicaux
OBS
