In the pickle industry, salt is used as brine to which fresh cucumbers are added. A selective fermentation then proceeds which is governed by salt concentration. Cost and time are dictating a movement toward "fresh-pack" pickles, in which salt and spices are added with the fresh cucumber, the jar is sealed, and the whole package is heated for pasteurization preservation.

Vacuum distillation is a technique that uses a vacuum to extract analytes from a sample. A condensing column is used in the technique to condense water that may also be present in the sample. A cryogenically cooled trap (cryotrap) is used to condense the compounds of interest. During a vacuum distillation procedure a sample is evacuated to a low pressure vaporizing volatile compounds, including water. The condenser column retains vaporized water and those vaporized compounds that are not condensed in the column are frozen in the cryotrap.

The water not evaporated in the diffusion tower will be collected at the bottom as brine and pumped through the regeneration heater using a brine pump. The air/water mixture enters a condensing tower where the water vapor is condensed into fresh liquid water that is collected in the sump of the condenser.

Solar salt pond generating project. A body of water that collects solar energy and stores it as thermal energy. The introduction of salt into a pond allows the density of the pond water to be controlled. A salinity gradient within the pond allows thermal storage in the dense high-salinity water near the pond bottom. The stored thermal energy is used to drive a Rankine-cycle heat engine.

Salt-gradient solar ponds operate with three distinct zones of increasing salinity from the surface to the bottom. The bottom, or storage zone, is a convective layer of near-saturated brine. The intermediate or gradient zone is a non-convective insulating layer of decreasing salinity towards the surface zone. The surface zone is a thin convective layer of fresh or slightly saline water.
