Any of a broad group of plant-derived phenolic compounds characterized by their ability to precipitate proteins.

Tannins may be classified chemically into two main groups, hydrolyzable and condensed. Hydrolyzable tannins... yield various water-soluble products, such as gallic acid and protocatechuic acid and sugars. Gallotannin, or common tannic acid, is the best known of the hydrolyzable tannins.
