The inner surface of the stomach is lined by a mucous membrane known as the gastric mucosa. The mucosa is always covered by a layer of thick mucus that is secreted by tall columnar epithelial cells. Gastric mucus is a glycoprotein that serves two purposes : the lubrication of food masses in order to facilitate movement within the stomach and the formation of a protective layer over the lining epithelium of the stomach cavity. This protective layer is a defense mechanism the stomach has against being digested by its own protein-lyzing enzymes, and it is facilitated by the secretion of bicarbonate into the surface layer from the underlying mucosa. 3, record 3, English, - gastric%20mucosa

1, record 5, French, - calcification%20m%C3%A9tastatique

Important food allergens were stable to digestion in the gastric model(simulated gastric fluid). For example, soybean beta-conglycinin was stable for 60 min. In contrast, nonallergenic food proteins, such as spinach ribulose bis-phosphate carboxylase/oxygenase, were digested in simulated gastric fluid within 15 sec. The data are consistent with the hypothesis that food allergens must exhibit sufficient gastric stability to reach the intestinal mucosa where absorption and sensitization(development of atopy) can occur. 3, record 6, English, - simulated%20gastric%20fluid

2, record 6, French, - liquide%20gastrique%20simul%C3%A9
