English

Subject field(s)
  • Food Additives
  • Food Industries
DEF

Substance that absorbs moisture and [is] used to maintain the water content of materials like tobacco, glue, inks, baking products... E. g. glucose syrup, invert sugar, honey, dried whey, glycerol, sorbitol. [Humectants] allow the addition of sugar without [the addition of] more water and so prevent the growth of moulds.

French

Domaine(s)
  • Additifs alimentaires
  • Industrie de l'alimentation
DEF

Well-mixed reactors which rely on a selective membrane to separate low molecular weight products from higher molecular weight substrates. They are therefore most useful for carrying out depolymerization reactions, especially when using soluble enzymes, so as to ensure good contact with macromolecular substrates. The main disadvantages associated with the use of these reactors are the small sizes of reactor available, and concentration polarization, that is blockage of the pores in the membrane by solid, fat or colloid particles present in the substrate.

CONT

Production of glucose from cellulose by enzymic methods has been investigated, and a procedure using an enzyme reactor having an ultrafiltration membrane has been reported for this purpose. Cellulose was heated at 200° C in a running porcelain pot mill for 25 min, ground to fine particles with a diameter of 50-150μ, and then suspended in water. The cellulose suspension was reacted with cellulase from Trichoderma viride in an ultrafiltration membrane reactor, and the resulting glucose syrup was continuously removed from the reactor through the membrane.

OBS

Similar selective membranes have also been used in hollow-fibre reactors, which can be used in a plug-flow fashion with substrate rapidly recirculated through the reactors, but with the enzyme located inside the fibre.

Domaine(s)
  • Sciences biologiques
CONT

  • Sugar Industry
DEF

Any of a group of corn syrups that has undergone enzymatic processing to convert its glucose into fructose and has then been mixed with pure corn syrup(100% glucose) to produce a desired sweetness.

CONT

The usual use for glucose isomerase is to take glucose made by hydrolysis of corn starch and turn it into a mixture of mostly fructose with some glucose. The corn starch is broken down using amylases. The result is called "high fructose corn syrup(HFCS). "

OBS

"High-fructose corn syrup" is often used as a synonym for "isosyrup" since it is the main type of isosyrup.

OBS

On food labels, you may see HFCS called "glucose-fructose."

DEF

... a syrup, made using cornstarch as a feedstock, and composed mainly of glucose.

OBS

Corn syrup is used to soften texture, add volume, prohibit crystallization and enhance flavour.

OBS

The more general term "glucose syrup" is often used synonymously with "corn syrup, "since the former is most commonly made from corn starch. Technically, glucose syrup is any liquid starch hydrolysate of mono, di, and higher saccharides... made from any sources of starch; wheat, rice and potatoes are the most common sources.

CONT

Corn syrup solids are produced by carrying out the corn syrup refining process until the dextrose content makes up more that 20% of the total dry product. Because of this high ratio of dextrose, corn syrup solids are often used as a sweetener, especially in low-fat foods. Corn syrup is often used in low-fat foods as it adds sweetness, viscosity, and improves texture.

CONT

According to The Condensed Chemical Dictionary, "glucose syrup" and "corn syrup" are synonyms, while they are considered as different concepts by the Van Nostrand's Scientific Encyclopedia.

A variety of enzymes have now been adsorbed to modified celluloses(DEAE) which, in two instances, have led to the development of major industrial-scale immobilized enzyme processes. In one case Tosa et al. brought to industrial scale a process in which various amino acylases adsorbed to DEAE cellulose or DEAE Sephadex are employed to convert tonnage quantities of synthetic DL amino acids to the biologically available L-form. Most recently, a process utilizing glucose isomerase adsorbed to DEAE cellulose has been patented and used in the full-scale conversion of corn syrup sugar to fructose.
