Color and texture of lean are usually determined by examining the cross section of the loin muscle after a carcass has been "ribbed down", but some indications may be found in other parts of the carcass. While "dark-cutting beef" has the same eating qualities as that of bright color, it is not so attractive to the consumer and is discounted in the trade. Accordingly, it is not accepted for Grade A when the condition is apparent.

Generally, three grades of vanilla are used in food and beverages. The highest grade is called fine vanilla or legitimate vanilla. The pods are thin, eight to 12 inches long, very black in color with a shiny surface coated in givre. Second-best is woody vanilla or bastard vanilla. These pods are five to eight inches long, reddish-brown in color with a dull surface. Vanillon places last among the grades. Vanillon has soft brown pods that are flat and thick. They are frequently partly opne and rarely show any signs of givre.

Any of a group of saturated higher fatty acids derived from the gas-oil fraction of petroleum by extraction with caustic soda solution and subsequent acidification.

Gulf and West-coast crudes are relatively high in these acids. The commercial grade is a mixture, usually of dark color and unpleasant odor; corrosive to metals. The chief use of naphthenic acids is in the production of metallic naphthenates for paint driers and cellulose preservatives. Other uses are as solvents, detergents, rubber reclaiming agent, etc.

Water-miscible liquids are mixable in water. The technical grade material may be initially water miscible, or it may be alcohol miscible and formulated with an alcohol to become water miscible. These formulations resemble the emulsifiable concentrates in viscosity and color, but do not become milky when diluted with water.
