Riz poli : 3ème traitement : c'est un blanc qui subit un ponçage mécanique (en polisseuse [...]) pour être débarrassé du son adhérant à sa surface, afin d'améliorer sa translucidité. Ce ponçage peut être plus ou moins accentué pour se rapprocher du cœur du grain (le grain perd encore un peu plus de ses propriétés nutritives, vitamines, sels minéraux et fibres). La polisseuse comporte un cylindre ou cône, horizontal ou vertical, recouvert de bandelettes de cuir, qui élimine, en douceur, le son, par rotation dans un compartiment entouré de grillage ou d'un écran en acier à fentes.
