The results showed that railroads had the most market power over long, cross-country moves. However, there were exceptions. Unlike the grain freight market, for frozen freight, the length of haul was less of a determining factor behind truck and rail competition. Across all haul distances, rail demand for frozen products, on average, was more sensitive to changes in rail rates than frozen truck demand was to changes in truck rates. As a result, rail carriers are less likely to hold substantial market power in the frozen freight markets. For frozen freight, trucks compete with rail for shipments, even over long distances. This effect is likely due to frozen freight's time sensitivity and lower volumes(than grain). Determining the moisture content of grain is an operation of particular importance at all stages of the post-harvest system. Before the harvest, for example, it permits an estimation of the degree of maturity of the grain. After threshing, it is used for deciding on methods and durations of drying. Before processing of products, it shows whether the grain is in condition for treatment. Commodity exchanges developed in cities which were transportation or trading centres for commodities. New York was still called New Amsterdam when an open market developed along the Manhattan Island waterfront. Here businessmen traded grain, fats, oils and provisions under the very bows of the ships that carried produce to world markets and brought silks to New York. A merchant who buys grain in the cash market can protect himself against possible price reductions by selling a futures contract for an equal volume of grain. For example, a primary elevator company which has bought grain from producers and paid cash for it, faces losses if the cash price falls before the grain can be shipped to a terminal and sold. Producers receive an initial payment when they deliver grain to a primary elevator. The level of this initial payment is set by the Canadian Government and is a government-guaranteed price to the producer. The initial payment for each pool account is usually set at what is regarded as a "safe" level and varies from year-to-year according to market conditions.... The net value of grain in each pool account is determined after all grain has been sold and all costs involved in marketing have been deducted. These costs include interest, insurance, storage, terminal elevators handling charges, and the Board's own operating costs. They do not include rail freight costs from primary elevators to terminals or primary elevator handling charges.
