Determining the moisture content of grain is an operation of particular importance at all stages of the post-harvest system. Before the harvest, for example, it permits an estimation of the degree of maturity of the grain. After threshing, it is used for deciding on methods and durations of drying. Before processing of products, it shows whether the grain is in condition for treatment. At the time of marketing, it reveals the quantity of dry matter that is being bought, and thus permits establishment of the fair sales price(water does not have the same market value as grain). The batch-in-bin drying process involves using a bin as a batch dryer. A 3 to 4-foot deep layer of grain is placed in the bin and the fan and heater started. Typical drying air temperatures are 120 to 160F with airflow rates of 8 to 15 cfm/bushel. Drying begins at the floor and progresses upward. Grain at the floor of the bin becomes excessively dry while the top layer of the batch remains fairly wet. The grain is cooled in the bin after it is dried. Some batch-in-bin dryers hold the grain being dried in a layer near the roof. After the grain is dried it is dropped to the bin floor where it is cooled. Analyses of whole or ground grain by physical methods would be better suited to handling large numbers of samples, as in protein segregation of carlots, or continuous monitoring as in loading an export cargo. Such procedures are now known and include near infrared reflectance(NIR) and near infrared transmission spectroscopy. NIR instruments have been in use for protein segregation in Canadian terminal elevators since 1975. The accuracy and precision of these instruments are equivalent to most of the standard methods of protein analysis including the Kjeldahl. NIR instruments are the most recent introduction to protein testing. They are very rapid and do not require the grain to be ground. An additional advantage of these instruments is their capacity for similarly determining moisture as well as protein.
