Skin-fermented or skin-contact white wines are white wines that have had extended contact with grape skins. This is unique, because typically, white wines do not spend time on their skins during fermentation. When white wine grapes are pressed, only the juice is fermented. The Vintners Quality Alliance(VQA) is an Appellation of Origin system by which consumers can identify wines of Canada based on the origin of the grapes from which they are produced. With the VQA system, Canada joins other leading wine-producing countries in developing a body of regulations and setting high standards for its wines. In Ontario, the VQA officially began in 1988. The Ontario VQA encouraged the British Columbia wine industry to undertake a similar VQA program, which the province did in 1990. There are two distinct wine-producing regions in Canada : the provinces of Ontario and British Columbia. The VQA recognizes three Designated Viticultural Areas in Ontario, and four in British Columbia. The Concord grape originated in 1854 and was discovered by E. W. Bull. The berries have a heavy wax bloom with blue skin and pale green flesh. Berry and bunch size is medium with a somewhat compact conical cluster shape. The Concord's skin is reasonably durable and separates easily from its pulpy flesh. Its primary use is for juice and jam/jelly preserves, and for fresh market consumption.
