The processes used for salting cod are generally the same in most areas and time periods, with some local variations. The colonial New England cod fishery is typical. Cod was either "dry cured" or "green cured. "For a dry cure, fish were usually cleaned, split, salted, and then stored aboard ship after each haul so they would not deteriorate at sea. Once the the ship returned to shore, the fish would be repacked, resalted, and eventually sun dried into tough, durable slabs that could be stacked and stored like wood. Dry curing was used when fishers traveled long distances to fishing grounds. In contrast, green curing, in which the fish were cleaned, salted, and dried on land rather than at sea, was used on shorter trips to nearby fishing grounds.... Because it was a faster process, green curing did not wring as much water out of the fish as dry curing. Deoxyribonuclease(DNAse) agar actually has DNA in it. Deoxyribonuclease is an exoenzyme excreted from the cell which will break the DNA down into smaller molecules. There are 2 kinds of DNAse agar that can be used. 1) The first medium has no indicator, but is does require HCl(hydrochloric acid) reagent to be added after growth has occurred on the plate. Without DNAse enzyme, the HCl precipitates out the undestroyed DNA. The rest of the agar with the remaining DNA, which binds to HCl will have turned cloudy. Evaporimeter(atmometer) An evaporimeter consists of a flat, porous ceramic disk(Bellani plate) in which water is drawn up by capillary action as water is evaporated from the disk. It is used to directly estimate crop evapotranspiration rate. Several commercial models can be easily installed near the edge of a field or on a roadway in a field.(The unit must be located far enough into the field to avoid field boundary effects.) One commercial model provides a green canvas-like material covering the ceramic disc to simulate crop leaf color. Reasonably good correlation has been found between field measurements and that calculated from Penman-type equations. Small difference in evaporation rates may be found between individual meters.
