Recently, statements have been lanced that the fungus Monascus formates next to pigments also mycotoxines, mentioned here is especially citrinin. Citrinin, as has been known for a long time, is formating while growing on food stuff as a genus of penicillium and some genuses of aspergillus. The formation of citrinin, however, by Monascus varieties has so far not been proven and is according to present scientific knowledge very unlikely. Several [internal cooling] systems have been developed that incorporate three basic approaches : liquified gas, super-cold air with water vapor, and air exchange methods.... It is roughly estimated that about 75% of North American paper and paperboard output is subjected to some type of converting operation before reaching the final customer. The exact percentage would depend on the definition of converting; but presently, no precise guidelines for inclusion are universally accepted by the industry.... certain specific processing steps are common to a number of converting operations, and some of these will be discussed here.
