LIPID PEROXIDATION [4 records]

Record 1 2022-05-26

English

Subject field(s)
  • Chemistry
  • Biochemistry
CONT

Lipid peroxidation is an endogenous chain reaction that consists in the oxidative degradation of lipids; free radicals or non-radical species attack lipids containing carbon-carbon double bonds, with the hydrogen abstraction from a carbon and oxygen insertion that results in lipid peroxyl radicals and hydroperoxides.

CONT

Vanillin, syringaldehyde and gallic acid are phenolic compounds which can be detected in spirits which have undergone a process of ageing in oak casks ... These substances are to a great extent responsible for the organoleptic properties of drinks such as wine, rum, whisky and brandy, etc.

CONT

... some phenolic substance present in red, but not in white wine, may be responsible for the antioxidative properties of red wine supplementation for LDL [low density lipoprotein] LP [lipid peroxidation], and thus may possess antiatherogenic properties.

CONT

Free radical mediated lipid peroxidation has recently been identified as being involved in several diseases. High levels of lipid peroxides have been reported during the atherosclerotic process... and evidence has accumulated suggesting that circulating lipid peroxides play a pivotal role in atherogenesis leading to coronary heart disease...(In Atherosclerosis, 94(1992) 183-190.)
