Record number: 1, Textual support number: 1 CONT
Altering the composition of the gaseous environment which a food product contacts reduces the rate of microbiological growth and enzymatic action, reduces the rate of oxidation, and also retards the loss of product water content through respiration of differential water-vapor pressure.... Controlled atmosphere packaging(CAP) means actually controlling the total gaseous environment the product experiences. In commercial practice, it usually means lowering the oxygen and raising the CO2 and assuring that O2 does not diminish to extinction while the respiratory gases are swept out. Controlled atmosphere packaging implies constant control over all gases : O2, CO2, H2O, and ethylene and other trace gases. 4, record 1, English, - controlled%20atmosphere%20packaging

Fermentation processes that require the presence of air. 3, record 2, English, - aerobic%20fermentation
Record number: 2, Textual support number: 1 OBS
During fermentation organic matter is decomposed in the absence of air(oxygen) ;hence, there is always an accumulation of reduction products, or incomplete oxidation products.... There are also many microbiological processes that go on in the presence of air while yielding incomplete oxidation products. Good examples are the formation of acetic acid(vinegar) from alcohol by vinegar bacteria, and of citric acid from sugar by certain molds.... 4, record 2, English, - aerobic%20fermentation

[...] 2. La fermentation méthanique. 4, record 2, French, - fermentation%20a%C3%A9robie
