[A] root vegetable [is] a part of a plant grown underground and eaten as food. Root vegetables are a diverse group of foods, including culinary staples such as potatoes, onions, and carrots. Because "root vegetable" is a culinary category rather than a botanical one, it is composed not only of true roots but also bulbs, corms, rhizomes, tubers, and other underground plant structures.

L'appellation «légume racine» regroupe de nombreux légumes, de familles et d'apparences différentes. «Botaniquement» parlant, elle concerne également des organes différents. La racine stricto sensu, est la partie souterraine de la plante qui la maintient au sol et qui l'alimente en eau et en sels minéraux. Mais ce n'est pas le seul organe que l'on trouve sous terre : en effet, les rhizomes ne sont pas des racines, mais des tiges souterraines. Toute racine ou tout rhizome ne se consomme pas. Pour être considérés comme légumes, il faut qu'ils soient «tubérisés», c'est à dire transformés en tubercules. Un tubercule est un organe stockant des aliments de réserve. Il se trouve ainsi «gonflé» par ces derniers. On reconnaitra donc entre autres, comme racine tubérisée, la carotte, le panais, la betterave, le navet ou le radis, et comme rhizome tubérisé, la pomme de terre, le topinambour ou le gingembre.

Starchy versus non-starchy vegetable classification is broadly based on the parts of a plant that are consumed.... Starchy vegetables... have a higher starch(or sugar) content [than non-starchy vegetables] and are considered dietary staples similar to rice or other grains. Starchy vegetables include some tubers and roots, such as potatoes and sweet potatoes(yams), cassava, sago yams, and taro. Although botanically they are classified as fruit, plantains are also classified as starchy vegetables. While starchy vegetables are concentrated sources of starch, they are less starchy than grains. Other root vegetables like carrots, beets, parsnips, turnips, and rutabagas are classified as non-starchy vegetables.

The most common type of turnip marketed as a vegetable in Europe and North America is mostly white-skinned apart from the upper 1-3 centimeters, which protrude above the ground and are purple, red, or greenish wherever sunlight has fallen. This above-ground part develops from stem tissue, but is fused with the root.

Drip Irrigation.... Water is delivered in small quantities under low pressure directly to... the root zone of the plants. You’ll need 1/2 inch polyethylene header pipe, and a roll of thin tape-like porous tubing. The header pipe connects to a garden hose and routes water through the garden. The pipe is placed either down the center or along one end of the garden. Small puncture holes are then made with a screwdriver into the header pipe at intervals corresponding to garden row. Eight-to ten-inch pieces of rubber connecting hose are then inserted into these holes. The other end of the connecting hose attaches to a length of porous tape. This tape is rolled out along each vegetable bed and cut to the same length as the row. Then end of the tape is then crimped to prevent water loss when the system is in use. Porous irrigation tape is best placed about three to four inches away from the base of the plants.

Trickle irrigation laterals can be divided into two categories : line source emitters and point source emitters. Line source emitters are used when plants are closely spaced within a row, with rows several feet apart as with most vegetable crops.... Point source emitters are used when widely spaced point sources of water are needed, as in the case of large containers or orchard crops where the trees are spaced several feet apart in each direction. This type of system utilizes one(or more) emitting device attached to a pipeline at or near the base of the plant, irrigating a single container or a bulb of soil surrounding the root mass of one plant.

Emitters also come factory-installed in polyethylene tubing; these are often referred to as "in-line" emitters or emitter lines. Spaced 12, 18, 24, or 36 inches apart, they deliver 1/2, 1, or 2 gph and are available in non-pressure-compensating and pressure-compensating versions. Some emitter lines are infused with a small amount of herbicide to prevent root intrusion; these can be buried and used to water lawns.
