Pastry chefs use a method called "tabling" to temper chocolate. [Tabling is] a cooling-and-agitation method which involves pouring two-thirds of the melted chocolate onto a marble slab. The chocolatier quickly spreads it thin with a metal spatula, scrapes it back into a pile with a putty knife, and spreads it thin again, repeating until the right sludgy consistency is reached. This cooled chocolate is stirred into the bowl of reserved warm chocolate. 1, record 7, English, - tabling

A glass that is heat-treated to have a higher tensile strength and resistance to blast pressures, although with a greater susceptibility to airborne debris. 5, record 9, English, - thermal%20tempered%20glass
Record number: 9, Textual support number: 1 CONT
Thermally tempered glass is glass that is strengthened by heat treatment. Relatively rapid cooling of the exterior surfaces of the glass results in residual compressive stresses at the glass surfaces. The case depth for thermally tempered glass is about 20 percent of the glass thickness. Thus, thermally tempered glass is fairly resistant to scratches and other minor surface damage. The amount of temper is defined by the magnitude of the residual compressive stress at the surface of the glass. Fully tempered glass has residual surface compressive stresses that exceed 13, 000 psi and are often as high as 25, 000 to 30, 000 psi. Fully tempered glass breaks into very small pieces when fractured. For transit applications thermally tempered glass is used to reduce the likelihood of lacerations whenever single-ply glass is required. 6, record 9, English, - thermal%20tempered%20glass

Video produced in 1994 by Sneyd Syndicate Inc., Orillia, Ontario. This touching drama describes how a little boy is affected by witnessing his father beating his mother. Seven-year-old Jonathan is having trouble at school. He has a quick temper, a short attention span and he is reluctant to tell anyone what's troubling him. A black-eyed Susan in a bouquet of flowers reminds him of his mother's black eye and his father's violence, so Jonathan refuses to go home. When his mother comes to pick him up, the abuse is revealed, and Jonathan's family gets the help they need. The aim of this film is to show children in similar situations that there are things they can do to help themselves. 1, record 22, English, - Black%2DEyed%20Susan

Staking machine. The purpose of staking is to knead the leather to soften it to the desired temper or flexibility after drying. There are two types of staking machines generally in use, the roll staker and the clamp staker. The roll staker works out the leather and makes it soft and mellow; the leather is worked through rollers through an extensive bend. The clamp staker is not as drastic as the roll staker and is more adaptable to heavier leathers, such as heavy upper leathers. 3, record 24, English, - staking%20machine

Concentrate is puffed to 20 times original volume by vacuum drying(29-in. vacuum and temper. up to 300 °F.)-cheaper than freeze-drying. The sponge-like structure can be obtained only by drying from a liquid film and cannot be produced by lyophilization or freeze-drying, a more costly drying procedure. The extremely low pressures necessary for freeze-drying are not required for this type of liquid-film or "puff" drying. In producing such heat-sensitive products as orange powder, using a liquid film of approximately 1/8 in. thickness, the drying cycle is 1 hr. 1, record 36, English, - puffed%20powder
