European grain moth. This insect can become a serious pest in elevators and warehouses, where it is usually found in pits, boots, bin slides, and chutes, as well as in the bins themselves. Wheat, rye, barley, and corn are the grains most commonly attacked, but it also breeds in bran and on some types of nuts. The adult moth is relatively small, with a wing-spread of about 1.2 centimetres. The head is white and the forewings are a creamy-white mottled with brown. There are two different commercial wheat debranning systems, the Tkac(1992) procedure and the ’PeriTec' process, marketed by Satake Corporation(McGee 1995). In both processes the wheat bran layers are removed by successive passages through modified rice polishers. A short conditioning period(3 to 5 min) is used to ensure that water penetrates into the outer regions only of the seed coat. Abrasion is used first in the Satake process, followed by friction, as in rice polishing. Dans tous les pays du Moyen-Orient et en particulier en Syrie, au Lyban, en Turquie et en Égypte, le "boulghour" sert de base depuis des siècles au régime alimentaire. Although one of the primary aims in durum wheat milling is to produce a speck-free product, bran specks in the final product are unavoidable. If wheat is improperly cleaned, foreign material such as earth pellets or insect fragments may also appear as black specks; kernels damaged by severe smudge, mildew, black point or ergot will also cause speckiness. Since a specky product is undesirable, one test for checking the efficiency of milling is the determination of number of specks per unit area of semolina. The definition of "speck" is not clear cut and differentiation must be made between bran specks and other dark or black specks. Insufficient cleaning of wheat, presence of damaged kernels in low grade wheats, and inefficient purification contribute to speckiness. Three pre-processed wheat bran fractions were evaluated for soluble and insoluble dietary fibre, ß-D-glucan content and starch levels. The gradual debranning of wheat bran was possible because wheat bran is composed of about eight layers and the physical binding force between these layers is loosened upon absorption of moisture. When different mechanical actions, such as friction and abrasion, are applied to tempered wheat, the "bran" can be sequentially removed(Dexter and Wood, 1996). The fractions, by-products of the debranning process, are rich in dietary fibre(Wood and Mullin, 1996) and may have great potential as functional food ingredients. Such techniques can be divided into two basic types : thin layer and deep bed. In the former system, the organisms are grown on the surface of the substrate, which is spread on shallow trays about 2-4 cm deep; the trays are incubated in air-conditioned rooms or cabinets. The cleaned and tempered wheat is now subjected to a series of grinding operations, of which the first five or six sets of rolls exert a crushing and shearing action.
