The starting point of any breeding program is the parent material. Since the breeder cannot as yet create or modify genes to suit his requirements(this may be possible in the future by a technique called genetic engineering) he must choose parents already endowed with the genes for the qualities he wants in the new varieties. Because the new variety must be adapted into growing conditions of Western Canada, and above all, must possess milling and baking qualities characteristic of wheat grown in that area, one of the parents will usually be a typical Canadian variety. Wheat is a self-pollinating crop. A variety is a uniform and true breeding population tracing back to one plant. These "one plants" are selected by the wheat breeder from the segregating populations that occur over several generations following(usually) a cross between two distinct varieties. Mendel started his experiments with true-breeding plant varieties, which he then hybridized in controlled crosses. An exemple is the sodium dodecyl sulfate(SDS)-sedimentation test developed in the United Kingdom to select for gluten strength in common wheat. The SDS test quickly became established as an early generation selection test in both the Canadian and American durum wheat breeding programs. The SDS test was embraced by the American pasta industry as a durum wheat purchasing specification to guarantee strong gluten because it was rapid and gave a quantificable result.
