WINTERIZED [4 records]

Record 1 2011-06-15

English

Subject field(s)
  • Freezing and Refrigerating
  • Fatty Substances (Food)
DEF

Chilling of edible oils to remove the more saturated glycerides so that the oil remains clear at low temperatures.

CONT

Crystallization, or winterization, of cottonseed oil is required for the production of salad oil to prevent solidification or crystallization at refrigerator temperatures. Refined and bleached oil is gradually chilled during a period of about 36 hr to 42 [degrees F] to crystallize the more solid glycerides. Solids are filtered out and the oil deodorized. Cottonseed oil is sometimes winterized in the extraction solvent.

Domaine(s)
  • Congélation, surgélation et réfrigération
  • Corps gras (Ind. de l'aliment.)
DEF

DEF

A test which determines how well the high melting point portions of an oil have been removed during processing to produce a "salad" or "winterized" oil.

CONT

In the test the oil sample is held in an ice water bath (32 ºF) and the time required for the first appearance of cloudiness is noted as "Cold Test Hours". A cold test of only a few hours means that oil will separate readily into liquid and solid portions at low storage temperatures.

CONT
