A comparatively new vegetable in the U. S., celtuce has been grown in China for many years. This type has an enlarged stem and no head. The leaves are not palatable, as those of other types, except possibly while they are young and tender. It is grown principally for its large, fleshy stems which are peeled and eaten raw or cooked. Its flavor is a combination of celery and lettuce, from which it derives its name.

OBS

Stem lettuce is an ingredient of many Chinese dishes. Celtuce is the only variety offered for sale in the United States.

Laitue celtuce [...] Variété ressemblant à un croisement de céleri et de laitue, cultivée en Chine pour sa tige au cœur tendre. Les feuilles peuvent aussi être consommées à l'instar de la laitue lorsqu'elles sont encore jeunes. Quand la tige atteint entre 30 et 45 cm de longueur, on la coupe et on retire la pelure. Le cœur de la tige est ensuite consommé frais, tel quel ou en salade - ou encore cuit, comme on le fait en Chine. Saveur de laitue-concombre.

On récolte les pousses de bambou dès qu'elles sortent de terre, lorsqu'elles mesurent environ 15 cm. Elles sont de couleur blanc ivoire, car elles poussent à l'abri de la lumière; on les recouvre de terre afin qu'elles ne verdissent pas. À l'état frais, elles sont recouvertes de poils ténus mais acérés dont on doit les débarrasser pour ensuite les blanchir. Elles ne sont pas comestibles crues à cause des substances toxiques qu'elles contiennent et qui sont détruites par la cuisson.

P. cineraria is a genuine multipurpose species. It yields excellent firewood and produces high-quality charcoal. The wood is hard and reasonably durable with a variety of small timber uses. The foliage provides nutritious fodder, maximum yields being produced when the trees are pollarded on a three-year rotation. Palatability is good. The pods also provide good fodder, and when young, are a popular vegetable in the human diet in parts of India and Pakistan. In times of famine the bark of the tree is pounded into flour and made into cakes. The bark yields edible gums, is used locally in leather tanning, and is reported to be used to treat scorpion stings and snake bites. The flowers are valuable in honey production.
