Proteases act on proteins and break them down into smaller units. Some proteases are useful in breadmaking because they reduce mixing time and produce a more pliable, extensible dough with good handling properties. Sound flour has very little proteolytic activity. If required, proteases may be added in the form of malted cereal flours or various fungal protease preparations. Proteolytic enzymes require time to achieve their full effect on dough. In the sponge-and-dough process, protease is usually added to the sponge stage to give the enzyme more time to act and eliminate the inhibiting effect of salt which is added at the dough stage.

Acetic acid is the most extensively used organic acid, and is obtained either by the oxidation of alcohol and aldehyde, or by the destructive distillation of wood and carbohydrates in general. This yields an impure pyroligneous vinegar, which is subsequently purified.... Stahl proposed in 1700 a method to obtain acetic acid from vinegar by exposing the latter substance to a freezing temperature, separating the ice from the stronger acid; another method he suggested was to neutralize with an alkali and to evaporate, then distilling with an equal amount of sulphuric acid. In 1759 Count de Lauraguais obtained a crystallized acetic acid in a distillate of cuprum acetate, then known as "copper spirit. "The name glacial acetic acid was affixed to this substance by Löwitz(1793), who repeatedly distilled diluted acetic acid with powdered charcoal, and obtained thereby a crystalline acid by subjecting the product to a low temperature.

Cloruros de mercurio Hg2Cl2, HgCl2. El cloruro mercurioso Hg2Cl2 o calomelano, es un sólido blanco, insoluble en agua, alcohol y éter. Se descompone por la luz y el calor en HgCl2 y H. Los agentes alcalinos, como el bicarbonato, aumentan su toxicidad, al transformarlo en HgCl2. El cloruro mercúrico HgCl2 es corrosivo, fácilmente soluble en agua (mejor en fría), alcohol, éter y glicerina. El cloruro sódico aumenta su solubilidad en agua. Reductores como el SO2 o el ácido fosforoso, lo reducen a calomelano. El sublimado de HgCl2 es cáustico e irritante de las mucosas, por formación de albuminatos solubles. Los polvos de HgCl2 pueden perforar la córnea por este motivo.
