Well-known organic gel-forming substances are gelatin, collagen, metallic soaps, and such carbohydrate polymers as starches, agar, dextran and pectin. A chemically related group of hydrophilic vegetable gums also swell in water but do not form gels (arabic, tragacanth, karaya, etc.).
