Les taux de phosphorylation du glycérol et d'oxydation du glycérol-3-phosphate sont moins rapides chez les rats consommant de l'éthanol que chez les rats témoins, ce qui indique une diminution de l'activité de la glycérol kinase et de la glycérol-3-phosphate déshydrogénase, donc, une utilisation plus lente du glycérol. Le taux d'utilisation du glycérol est fonction de la dose de glycérol et de la concentration d'oxygène.
