A white, crystalline amino acid found as a constituent of many proteins.

Glycine makes up about 25% of the molecules of gelatin, while fibroin, the chief constituent of silk, contains about 50% glycine units ... In its pure state, glycine forms white, very sweet crystals that melt and decompose at temperatures of 232° to 236 °C (450°-457 °F).

Glycine has been used as a sweetener, a bacteriostatic agent, and an antioxidant.

It is formed by various microorganisms, and is capable of causing the change of urea into carbon dioxide and ammonia and of hippuric acid into benzoic acid and glycocoll.
