Un gaz porté à une température supérieure à la température critique se comporte à hautes pressions comme un gaz quant à sa mobilité (faible viscosité), et comme un liquide quant à sa densité (fort pouvoir dissolvant). La température de travail peut être relativement basse, ce qui est un avantage pour certaines substances agro-alimentaires ou pharmaceutiques thermosensibles et peut permettre des économies d'énergie.
