Carbonation occurs when carbon dioxide is dissolved in water or an aqueous solution. This process is generally represented by the following reaction, where water and gaseous carbon dioxide react to form a dilute solution of carbonic acid. [H2O + CO2=H2CO3] This process yields the "frizz", to carbonated water, the head to beer, and the cork pop and bubbles to champagne and sparkling wine. Carbonation is used to improve both the taste and "texture" of the carbonated consumable. Carbonation is sometimes used for reasons other than consumption, to lower the pH(raise the hydrogen ion concentration) of a water solution...

CONT

A number of parameters are measured by laboratory technicians to ensure that the quality of beer meets the satisfaction of the drinker. Among these parameters is Beer Foam analysis. Foam in a beer is produced once it is poured into a glass in a practical sense. In a laboratory situation, foam is produced in a test tube by the reproducable shaking of a beer sample. Traditionally, laboratory technicians would observe the beer sample and try to determine values for foam potential, the foam half life, and drainage. This procedure would be described as a Foam Assay.

DEF

... [A] plastic device inside aluminum cans... designed to help recreate the foamy head and taste of tap-dispensed beer.

CONT

The patented "smoothifier" - a small chamber with a tiny pinhole in it - is friction-fit to the inside bottom of aluminum cans .... beer is packaged into the cans at a higher pressure than typically used. Because of this, some of the liquid goes into the chamber. When the can is opened and the pressure is released, the liquid shoots out of the chamber and back into the can. This action agitates the beer.
