Although enzyme-catalyzed reactions often appear to have an optimum temperature, the peak in such a plot of catalytic activity vs. temperature results because enzymes, being proteins, are denatured by heat and become inactive as the temperature is raised beyond a certain point. The use of heat stable enzymes can retard the staling of baked and leavened cereal products such as bread. A concentrated protective sugar medium has been developed to solubilize or disperse a fungal alpha-amylase enzyme before it is incorporated in a dough. This medium protects the enzymes against thermal denaturation, thereby enabling the enzyme to remain active during baking and until the starch of the dough becomes gelatinized and subject to enzyme attack. 2, record 3, English, - heat%20stable%20enzyme
