The freezing system uses a highly effective heat transfer technology for rapid crust-freezing of raw protein-laden products. A low temperature plate filled with recirculating refrigerant begins the freezing process immediately to set the product's shape. With a firm bottom surface, the product has enough integrity to be transferred to a spiral or tunnel freezer where it can be deep frozen to 0°F. Including investment and consumable costs, mechanical freezing can be as low as one-tenth the cost of comparable cryogenic crust-freezing systems.

The term "Refractance Window" relates to the dryer's principle of operation. Water transmits infrared energy through conduction and evaporation but little radiation. If the water's surface is covered by a transparent medium such as plastic, evaporation and its associated heat loss is blocked and only conduction occurs. But when a moisture-laden material is placed on the plastic surface, a "window" for passage of infrared energy is created at the point where the material contacts the plastic where the plastic bears on the water. Therefore, all three methods of heat transfer, radiation, conduction and convection occur for exceptionally effective heat transfer. As the material dries, however, the infrared "window" is closed since moisture no longer contacts the plastic, and the only heat transfer taking place is by conduction.

The condensate that forms in the dryer cylinders is removed by a specially-designed syphon assembly.... at the high speeds of modern paper machines, the condensate layer has become so immobilized that even a very thin layer is a significant impediment to heat flow. Fortunately, the condensate layer still has some peripheral motion at high machine speed. This motion can be converted into a wave action by means of "dryer bars" attached axially to the interior surface of the dryer cylinder. This wave action(called "sloshing") greatly decreases the thermal resistance of the rimming condensate, and thus allows an increased rate of heat transfer.
