The Doppler effect on sound waves is experienced in everyday life. When an ambulance passes us, the siren appears to change its note. As it approaches, the pitch is high. As it passes us, the pitch falls. The effect occurs with any type of waves, including light. During a turn the nose of the aircraft is continually pitching up. Your pitch gyro will see this and attempt to stop it. This results in the nose dropping, and a decrease in altitude.
