Le dégorgeoir sert à retirer l'hameçon de la gorge du poisson. Le bout dégorgeoir est taillé en encoche, ce qui permet de suivre le bas de ligne et d'arriver à l'hameçon. Dès que la courbure de ce dernier est calée dans l'encoche, on dégage aisément la pointe et on extrait délicatement le tout.
