On ne retrouve pas le terme «shortening» dans le «Petit Robert» (2003), dans le «Grand Larousse universel» (1995) et dans l'édition électronique du «Trésor de la langue française». «Le Colpron : le dictionnaire des anglicismes» et le «Dictionnaire québécois d'aujourd'hui» mentionnent, pour leur part, que «shortening» est un anglicisme. Seul le «Dictionnaire québécois français» de Lionel Meney souligne que ce terme est un emprunt direct à l'anglais. Par contre, force nous est de constater que le terme «shortening» apparaît au Canada dans l'étiquetage français des produits alimentaires. Il est aussi largement utilisé dans les textes français édités au Québec. On le retrouve dans les textes provenant de différents ministères fédéraux comme l'Agence canadienne d'inspection des aliments, le Tribunal canadien du commerce extérieur et l'Agence des services frontaliers du Canada.
