Los granos son pequeños, con pericarpio grueso y varían en su forma de redondos a oblongos. Cuando se calienta el grano, revienta y el endospermo sale. Varias formas primitivas de maíz tienen granos de tipo reventón. El uso principal del maíz reventón es para bocadillos (rositas o palomitas). Los granos con bajo contenido de humedad -cerca de 14%- cuando se calientan a alrededor de 170°C, revientan y cuanto mayor es su expansión mejor es la calidad del producto final.
