Les meilleurs meules, faites de pierre meulière, calcaire silicieux que l'on trouve dans le bassin parisien, sont construites par segments, puis reliées par de lourdes tiges de fer. Les surfaces de contact des meules sont cannelées. Un meunier habile entretient les surfaces de mouture s'assurant ainsi de la précision des cannelures de la meule qui déterminent la finesse du grain. Les pierres sont travaillées avec un marteau-burin appelé pilon.
