Sustainable eating is about choosing foods that are healthful to our environment and our bodies. According the 2019 EAT-Lancet commission on healthy diets from sustainable food systems, a global shift toward more plant-based foods would help feed the world's growing population a nutritious and sustainable diet. This plant-based eating style includes more legumes(beans, peas, lentils, peanuts), whole grains, vegetables, fruits and nuts, and less animal-based foods, especially red meat and processed meat. Limiting refined grains and added sugars is encouraged as well.

Formé du préfixe éco- et du mot «responsable», le terme «écoresponsable» s'inscrit dans une démarche de développement durable. Il implique de prendre en considération les conséquences potentielles à court et long terme de nos comportements et choix. Par exemple, choisir d'acheter des fruits et légumes locaux et cultivés dans le respect de l'environnement et des travailleurs [...] est considéré comme un choix écoresponsable! L'écoresponsabilité appliquée à l'alimentation implique la minimisation des impacts environnementaux des aliments tout en maximisant les impacts sociaux positifs. Une alimentation écoresponsable est directement liée à l'impact des changements climatiques, qui altèrent à long terme des aspects liés au temps tels que la température, les précipitations, la configuration des vents, etc.
