De nombreuses études phytochimiques, pharmacologiques et chimiques ont par conséquent été consacrées à l'ail au cours des 20 dernières années. Le bulbe renferme surtout des sucres, des acides aminés et des constituants soufrés. Cette dernière classe de substances est la plus importante. Le constituant principal de la gousse d'ail intacte est l'alliine, inodore et non volatile. Lorsque l'ail est coupé ou broyé, cette molécule est dégradée par une enzyme en de nombreux produits soufrés volatiles et de forte odeur, dont l'alliicine, des polysulfures et l'ajoène. La plupart de ces produits de dégradation sont responsables des activités biologiques et pharmacologiques attribuées à l'ail. L'activité antibactérienne de l'ail lors d'infections du tractus gastro-intestinal a été scientifiquement prouvée. 1, record 1, French, - allicine
