All ... amino acids ... except proline have as common denominators a free carboxyl group and a free unsubstituted amino group on the [alpha] carbon atom. They differ from each other in the structure of their distinctive side chains, called the R groups.... La structure des acides aminés conditionne le repliement des protéines. Dans un acide aminé isolé, quatre groupes chimiques sont liés à un atome de carbone central, le carbone alpha; ces groupes sont un groupe amine NH2, un groupe carboxyle (COOH), un atome d'hydrogène et une chaîne latérale (notée R). Les 20 acides aminés ne diffèrent que par leur chaîne latérale. Dans une protéine, le groupe aminé d'un acide aminé est lié au groupe carboxyle de l'acide aminé suivant (avec élimination d'une molécule d'eau), formant ainsi une liaison peptidique. La mise en commun des électrons (leur délocalisation) entre les atomes d'azote, de carbone et d'oxygène empêche les protéines de tourner librement autour des liaisons peptidiques; chaque unité peptidique définit un plan rigide et les protéines ne peuvent se replier que par rotation autour des liaisons avec le carbone alpha. 4, record 1, French, - carboxyle
