To help allergic consumers buy food with complete peace of mind, the AQAA [Association québecoise des allergies alimentaires] has developed and manages a program that aims at establishing uniformity in allergen control in food products: the Certification Program for Optimal Control of Allergens in Processed Food, for which the mark of conformity is CAC - Certified Allergen Control.

The QFAA [Quebec Food Allergy Association] developed the CAC [Certified Allergen Control] program’s specifications, which define all the requirements to which companies must comply in order to have their products certified. The QFAA also created a logo that serves as a Certified Allergen Control (CAC) mark of conformity.
