During fermentation, the pulp and mass of colour- and tannin-imparting skins float on top of the juice, forming the "chapeau" or 'hat' .... When fermentation is over, the wine is drained off and the "chapeau" falls to the bottom of the vat.

Ce refoulement est d'autant plus nécessaire que, se trouvant en contact avec l'air, le chapeau s'acétifie facilement.
