Après avoir été nettoyés et triés, les grains d'orge sont mis à tremper dans des cuves, puis envoyés dans des germoirs. L'orge germée est ensuite séchée sur des tourailles qui arrêtent la germination. Cette opération est conduite en fonction de la qualité du malt que l'on désire obtenir : malt pâle pour la fabrication des bières blondes, malt coloré et aromatique pour celle des bières brunes.
