Since the ice is extremely pure, the remaining liquid will be concentrated with the soluble components (sugars, aroma, etc.).

Nouveau fleuron du terroir québécois, le cidre de glace fait de plus en plus d'adeptes. Ce produit, dont seul le climat québécois permet l'élaboration, est obtenu par une harmonieuse combinaison de deux procédés : la cryoextraction, qui consiste à broyer et presser des pommes gelées durant l'hiver, et la cryoconcentration, qui consiste à geler le moût l'hiver afin d'en extraire un sirop concentré en sucre et en saveurs. Les moûts sont ensuite fermentés.
