"Graisse" ("Fatty degeneration"). The wine becomes turgid and viscous and flows like oil. There is a decrease in sugar, an increase both in total and volatile acidity, and a gummy deposit.

La graisse est une altération qui se manifeste surtout sur les vins blancs mal soignés et mal constitués : faibles en alcool et pauvres en tanin. Ces vins deviennent fades et se troublent. Ils filent comme de l'huile et remplissent le verre sans bruit. La présence de gaz carbonique produit une légère effervescence.

D'après Muller-Thurgau et Osterwalder, la graisse ne serait pas une maladie, mais simplement la conséquence de la fermentation malo-lactique dans les vins mal constitués.
