L'huile d'olive est riche en acide oléique (acide gras mono-insaturé, C18:1) et en beaucoup d'autres substances. C'est la seule huile directement obtenue par pression d'un fruit, ce qui explique sa richesse en phénols (tyrosol et hydroxytyrosol) ainsi qu'en vitamine E, qui sont tous des antioxydants. Ces antioxydants pourraient être les substances responsables de la protection antitumorale.
