Tissu peu serré employé pour passer un coulis, une gelée, une sauce épaisse ou une purée de fruits. Le produit est soit foulé avec une spatule, à travers un tamis ou une passoire qui sert de support, soit emprisonné dans le tissu dont on tord les deux extrémités en sens inverse.

OBS

L'étamine était autrefois en crin, en laine, en soie ou en fil; on s'en servait pour tamiser, bluter ou filtrer. Aujourd'hui, elle est le plus souvent en fil de lin, en coton ou en Nylon, et est surtout utilisée en confiserie, sous le nom de «blanchet», pour la préparation des gelées et des sirops de fruits.
