Disaccharide réducteur obtenu à partir du lactose, par un traitement thermique alcalin qui isomérise le glucose en fructose. Son pouvoir sucrant est supérieur à celui du lactose. Les disaccharidases de l'épithélium intestinal ne l'hydrolysent pas, à la différence des enzymes de la flore digestive. Il est mal absorbé par la muqueuse de l'intestin grêle. On lui attribue un rôle de substrat nutritif pour Lactobacillus bifidus et, pour cette raison, il est introduit dans certains laits maternisés.
