Les concentrations de produits chimiques toxiques dans l'environnement s'expriment souvent en milligrammes par kilo (mg/kg) ou milligrammes par litre (mg/l). Lorsqu'il s'agit d'œufs d'oiseaux, les concentrations sont habituellement données en fonction du poids de la partie liquide de l'œuf, c'est-à-dire son «poids frais». C'est donc dire que mg/kg (poids frais) désigne le nombre de milligrammes de contaminants par mille grammes de contenu de l'œuf.
