Kjeldahl : Méthode chimique de dosage de l'azote dans un produit agro-alimentaire. La méthode consiste à minéraliser l'échantillon par voies humide à l'aide d'acide sulfurique et de catalyseur minéral (cuivre, sélénium, etc.) en chauffant jusqu'à disparition de toute coloration. La totalité des formes organiques d'azote est convertie en sulfate d'ammonium. L'ammoniaque est déterminée par une technique appropriée (distillation, électrode spécifique, etc.). Couramment, on multiplie le résultat par 6,25 ou par un coefficient spécifique pour l'échantillon, pour obtenir le taux de «protéines brutes». Ce mode classique de calcul comporte une marge appréciable d'inexactitude dans la mesure où le coefficient de multiplication est appliqué à la fraction protidique de l'azote comme aux formes non protidiques (bases puriques et pyrimidiques, urée, etc.) dont certaines n'ont qu'un faible intérêt nutritionnel. 2, record 1, French, - proc%C3%A9d%C3%A9%20macro%2DKjeldahl
