L’homme a toujours cherché des moyens de conserver les denrées alimentaires pour assurer sa survie en période de disette. Aux premières et simples méthodes de conservation (le séchage), ont succédé les techniques de salaison, la conservation par le sucre (les confitures) et la fermentation (vin, fromage, choucroute…). Au siècle dernier sont apparues la conservation par la chaleur et plus récemment par le froid avec le développement des installations frigorifiques. Ces différents procédés ont chacun leurs avantages en termes de praticité et de qualité nutritionnelle.
